HIGHLIGHTS / 本豆種於2014和2022年曾獲得COLOMBIA COE, 小編飲左幾次同,品種都係好鐘意,因為風味乾淨,有種獨特花香同柔和甜感,都幾有驚喜。 今次呢個批次本來叫Cutrra Chiroso,小編好奇問生豆商,呢隻唔係單品豆咩?點解又有Cattura?生豆商回覆就話""caturra xxx or bourbon xxx,通常都係同一個品種但有兩個樹種,一個高啲一個矮啲,佢地就會用呢個方法區分,bourbon xxx就係高啲,caturra xxx就係矮啲""不過唔係個個農場都係咁,所以唔可以作準。 人工採摘並去除壞果後,先在封閉的塑膠桶中靜置發酵 48 小時,而後脫去果皮去果膠,再靜置於開放容器裡,進行第二次發酵,又是另一個 36 小時,最後再將咖啡單層鋪平進行乾燥。
